And rice, like the rest of the ingredients, needs a certain way to preserve its beneficial properties, noting that the rice dish is intended as a main dish not only in Arab and Asian kitchens, but rather it has been imposed in many kitchens around the world.

Scientists at the University of Sheffield in the United Kingdom have identified, through a recent study, the most beneficial scientific method for cooking rice, especially as it is a component capable of accumulating arsenic, which increases the risk of death from cardiovascular disease.

According to the study, experts analyzed the possibility of reducing the level of inorganic arsenic in rice by washing it, and using different methods of cooking, and they discovered that when evaporation the water absorbs the largest amount of harmful substances while preserving the beneficial properties of the product.

Accordingly, experts advised the cooking method to boil the water, then add the rice and cook for 5 minutes. Then the old water that removed most of the arsenic must be drained, add new water, cover the pot with a lid and cook over a low heat until all the liquid is absorbed.

In this way, about 54% of the inorganic compounds are removed from brown rice, and about 73% from white rice, while retaining the majority of the nutrients present (phosphorus, potassium, magnesium, zinc and manganese).
